Las Vegas is known as the entertainment capital of the world, but it could easily be the restaurant capital, too. Here's a sampling of some of the great eats from the Strip.

This is the first Vegas restaurant for Gordon Ramsay, the famous foul-mouthed Brit who has made quite a name for himself in American reality TV. Chef Ramsay and his crew have created an exclusive beef aging process, dry aged for at least 28 days in a Himalayan salt room, for Kobe and prime beef cuts, with demi-roasted bone marrow, pan-seared foie gras or butter-poached lobster tail suggested on the side. The shellfish, appetizers, salads and sides complement the beefy offerings. Try the five-course limited edition Hell’s Kitchen tasting menu, featuring a scotch egg, beef wellington and sticky toffee pudding. Open for dinner.

For tapas and classic Spanish fare, Julian Serrano is a favorite on The Strip. In an effort to engage all five senses, Sensi’s innovative menu focuses on four specialties: Italian, Asian, American and seafood. The restaurant also prioritizes sustainably grown and naturally raised foods, getting some of its fresh herbs from a rooftop garden. Try the Thai coconut soup, organic butter chicken curry and tapioca pudding off the prix fixe menu. If you’re into seafood, this place is the real deal. By Vegas standards, this restaurant is ancient — in a good way. It opened in 1972, and remains one of the last stand-alone structures on The Strip. If you’ve seen the movie “Casino,” you’ll recognize the neon decor, mirrored ceilings, fake blooming cherry trees and the signature fire pit in the lounge area. This cross between a diner and a supper club is open 24/7 and offers generous portions whether you’re ordering breakfast, soups, salads, sandwiches, burgers, steaks or entrees. The desserts, including “colossal sundaes,” are worth the visit alone.

Celebrity chef Rick Moonan, of rm seafood in Mandalay Bay, has expanded his culinary footprint by opening a more casual restaurant just one floor above his Las Vegas destination restaurant. Decor at the Rx (pronounced “Rick’s”) Boiler Room brings to mind the steampunk Victorian era, and the menu offers playful renditions of comfort food on both small and large plates. Try inventive items like the bucket of crispy fried game hen, shellfish shepherd’s pie, the Mediterranean collard green wrap or the Hawaiian-style green tea panna cotta. This trendy gastropub is open for dinner, has a full bar and is open until 2 a.m.
