In schools and hospitals, kitchen floors are typically concrete, terrazzo or grouted ceramic tile. These types of floors are slip resistant, however, spilled grease, which is a common problem in kitchens, makes for a slippery surface.

It is recommended that cleaning crews apply a degreaser to the floor at least every other day to remove the oily soils. Afterwards, janitors should use a disinfectant to kill the remaining germs and bacteria.

Because the stationary objects such as sinks, ovens and refrigerators are heavy and difficult to move, it will be easiest for cleaning staffs to apply the chemicals with mops rather than autoscrubbers. However, floors, especially grouted ones, will need occasional scrubbing with a bristle brush to remove soils that build up over time.
