The cleanliness of food preparation areas, surfaces, and wares used to prepare and serve food are essential in the fight to prevent foodborne illnesses. In fact, food safety compliance was the single most important issue among over 700 foodservice professional respondents surveyed by the Kline Group. Employee training was a close second in terms of importance, followed by Internet of Things, green cleaning, and the impact of perception and online reviews.
The demand to prevent foodborne illnesses has gained momentum due to more stringent processes for cleaning, as well as an improved economy that has more consumers dining out. The result is that the foodservice cleaning products market has seen a 2.4 percent compound annual growth rate (CAGR) since 2013, reaching roughly $2.7 billion.
According to Kline, full-service restaurants still account for the majority of the growth, but fast-food and fast-casual establishments have seen the quickest increases. Lodging establishments, nursing homes and long-term living facilities, as well as schools and hospitals have all increased their use of foodservice cleaning chemicals.
In terms of product specifics, machine dishwashing detergents is the largest category, followed by manual dishwashing detergents and rinsing and drying aids. Manufacturer market leaders include Ecolab, Diversey and P&G Professional, but according to the study, companies that offer employee training and the servicing of warewash machines are valued partners in this market.
Reports indicate that the foodservice cleaning chemical market will continue to grow. Kline predicts an expected CAGR of 2.6 percent through 2022. Fast-casual restaurants will see the biggest growth, followed closely by hospitals and recreational facilities, as well as lodging, long-term care and fast-food establishments.
